I got no less than 10 requests for the Apple Muffin recipe Dee Dee kept close to her chest. This was the recipe she made for the guests at my wedding, that she took to people mourning the loss of loved ones, and that she made for every other occasion. Seeing that she won't be taking these muffins anymore, it seems appropriate to release the recipe into the world. All I ask is you remember her when you make them, and that at some point you make a second batch (not a double batch! Mom would never make a double batch! Those never turn out!) for someone who needs extra encouragement.
"Dee Dee's" Famous Apple Muffins
(Makes 12)
1 3/4 cup flour
1 1/4 cup sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
1/2 teaspoon cloves
1/8 teaspoon nutmeg
1 cup peeled, cored and chopped tart apple
2/3 cup raisins
1/2 cup vegetable oil
2 eggs
1/2 cup finely chopped walnuts
Preheat oven to 325.
Sift flour, sugar, baking soda, cinnamon, salt, cloves and nutmeg into a large bowl.
Mix in apple, raisins and nuts.
Stir in eggs. Blend in oil. (Batter will be stiff.)
Place 2 tablespoons each into each muffin cup.
Bake 25-30 minutes.
